A/O MERC’S Salmon Sheet Pan Dinner

  • Sheet Pan


  • 1 lb baby red potatoes
  • 2 lb salmon
  • 8 oz green beans trimmed
  • .5 cup olive oil
  • 1/2 lemon thinly sliced
  • Livia’s Seasoning Salt to taste
  • 2 tbsp Italian parsley chopped, optional


  • Preheat oven to 400 degrees Fahrenheit. Lightly oil sheet pan with 1 teaspoon olive oil or line with parchment paper
  • In a large pot of boiling water, boil potatoes until parboiled for approximately 12 to 15 minutes; drain well.
  • In a large mixing bowl, toss potatoes with 3 tablespoon olive oil and season with Livia’s Seasoning Salt to taste; transfer to one side of prepared sheet pan in a single layer.
  • In the same mixing bowl, toss green beans with 2 tablespoons olive oil and season with Livia’s Seasoning Salt; transfer to opposite side of sheet pan in a single layer.
  • Place salmon down the center of the sheet pan.Brush with two tablespoons of olive oil, season with Livia’s Seasoning Salt and top with lemon slices.
  • Place in oven and bake until salmon flakes easily; approximately 16 to 18 minutes or until internal temperature reaches 145 degrees Fahrenheit
  • Garnish with chopped Italian parsley, if desired.
